My take on the classic Salad Niçoise, with produce I had on hand. This may not be how it's done in Nice, but I assure you, it's VERY good🍴
Tuna, spinach, tomatoes, boiled potatoes, green beans, cucumber, pickled beets, black olives, hard boiled egg and a tarragon-shallot-Dijon vinaigrette.
